Taproom Draft Lineup Many of our draft options rotate week to week. Several variables come into play including seasonal fruit availability, and the varying times it takes many of our beers to reach maturity. That being said, we always have at least one barrel aged sour option available (although its more likely to see 3-4), and we make an effort to keep a few of our staple beers available at all times. Those include Three Lakes IPA, French Creek Saison, Belgian Dubbel, and Imperial Field Weisse. The list below serves as a database containing most of the beers we've released over the lifespan of the brewery. It should not be viewed as a list of currently available options.
Bottle Availability Currently we release bottles every other weekend, and for the most part they are 750 mL bottles of one of our barrel aged sour beers. The best way to stay current on what we will be releasing, and what is currently available is to follow us on Facebook, Instagram or Twitter. Bottle release details are posted the week of via social media.
Stainless Steel Fermented Beers
Three Lakes IPA Style - India Pale Ale Abv - 6.8% Ibu - 55 Srm - 7 Extra - Mosaic, Azacca, and Rakau hops Three Lakes is a Hazy style IPA, with low bitterness and plenty of fresh hop flavor and aroma from the late addition hops. We brew this beer with white wheat and flaked oats to achieve a soft mouthfeel. Flavors include citrus, tropical fruit, berry, and pine.
Westwick IPA Style - India Pale Ale Abv - 6.4% Ibu - 60 Srm - 5.5 Extra - Hallertau Blanc and Columbus hops Westwick IPA is a showcase of Hallertau Blanc hops, This German hop producesa combination of white wine and fruit character rounded out by notes of gooseberry and lemongrass.
Belgian Dubbel Style - Dubbel Abv - 7.2% Ibu - 30 Srm - 18 Extra - Conditioned on Cacao Nibs Our Belgian Dubbel is made with sweet orange peel, cacao nibs, and a classic Abbey Ale yeast.
French Creek Saison Style - Saison Abv - 5.5% Ibu - 25 Srm - 6.5 Extra - Ekuanot & Loral Hops This Saison is a combination of new and old. The modern hops blend with the classic farmhouse ale yeast strain to create a balance of citrus notes and fruity esters. The flavor profile is rounded out with a subtle maltiness from the Munich and Vienna malt.
Field Weisse Style - Belgian Wheat Beer Abv - 6.6% Ibu - 30 Srm - 5.5 Extra - Made with Raw, Flaked, and Malted Wheat This easy drinking ale showcases the wonderful spicy character produces by Trappist style yeast.
Selfish Enclave Pale Ale Style - American Pale Ale Abv - 5.2% Ibu - 50 Srm - 6 Extra - Brewed with Galaxy Hops
La Notte Winter Ale Style - Belgian Dubbel Abv - 7.2% Ibu - 25 Srm - 22 Extra - Conditioned on Cinnamon, Cacao Nibs, Brewers Licorice, and Maple Syrup
Staring Bear Dark Strong Style - Belgian Dark Strong Abv - 8% Ibu - 33 Srm - 23 Extra - Brewed with Special B and Midnight Wheat Malt
Pilchuck River Red Style - Red Ale Abv - 5% Ibu - 35 Srm - 14 Extra - Brewed with Crystal and Melanoidin Malt
Barrel Aged Beers
Rye Barrel Belgian Style - Belgian Strong Dark Abv - 8.2% Ibu - 45 Srm - 30 Extra - Rye Whiskey Barrel Aged Rye Barrel Belgian begins as a Belgian Strong Dark that is fermented in stainless steel before being transferred into a Rye Whiskey Barrel from Skip Rock Distillery. Cacao Nibs, Vanilla and Coffee Beans are added to the barrel during the 6 months of aging. The results is smooth with a full chocolate & rye character.
Forte Peach Sour Style - Golden Sour Abv - 6.4% Ibu - 1 Srm - 4.6 Extra - Oak barrel aged on peaches This golden sour is fermented in a red wine oak barrel with our house sour yeast culture. After fermentation completes, Forte is aged for several months as the sour complexity increases. The beer is aged on 48 pounds of peaches once the desired acidity and flavor is achieved.
Farmhouse Sour Blend Style - Blended Sour Ale Abv - Varies Ibu - Under 5 Srm - Varies Extra - Oak barrel fermented and aged Occasionally we release a unique blended sour that combines our sour beer with a clean fermented beer such as our French Creek Saison or Belgian Dubbel. The sour and clean portions are selected to highlight complimenting flavors and aromas. The result is a complex and layered beer that finishes with a clean acidity.
First Light Apricot Sour Style - Sour Ale Abv - 7% Ibu - 2 Srm - 10 Extra - Oak barrel fermented with apricots First Light is oak barrel fermented with our house blend of Brettanomyces, Pediococcus, and Saison yeast. As the beer ages acidity is produced along with a range of stone fruit and funky flavors. When the beer has properly matured apricots and a lesser amount of white peaches are added to the barrel.
Dusk Plum Sour Style - Oud Bruin Abv - 6.5% Ibu - 6 Srm - 8 Extra - Oak barrel fermented with plums Dusk Sour Ale is oak barrel fermented with our house sour yeast blend, and then aged while the acidity matures. When the beer reaches maturity Italian Plums are added. The sweet and savory flavors of the fruit blend with the tart beer to create a delicious balance.
Cervoise d'Emily Style - Sour Red Abv - 6.8% Ibu - 1.5 Srm - 9 Extra - Oak barrel fermented with sweet cherries Cervoise d’Emily is oak barrel fermented with our house sour yeast blend, and then aged while the acidity matures. When the beer reaches maturity sweet cherries are added. The fruit blends with the acidic beer to create a balance of sweet cherry flavor and tart base beer. Name translates as “The ale of Emily”.
Morello Sour Style - Flanders Red Ale Abv - 5.2% Ibu - 5 Srm - 17 Extra - Bourbon barrel aged sour, re fermented on Griotte Morello and Dark Sweet Cherries
Bacca Sour Style - Oud Bruin Abv - 5.4% Ibu - 7 Srm - 20 Extra - Red wine barrel aged sour with Boysenberries and Citra dry hop
Rosso Sour Style - Flanders Red Abv - 5.5% Ibu - 5 Srm - 16 Extra - Red Wine barrel aged sour with Raspberries and Hibiscus
The Botanist Style - Golden Ale Abv - 5.8% Ibu - 5 Srm - 6 Extra - Barrel aged sour with a rotating blend of Spada Farm grown berries. Blackberry, Raspberry, Salmonberry, Etc.
Il Primo Style - Saison Brett Abv - 5.8% Ibu - 8 Srm - 5.5 Extra - Red Wine barrel aged with White Peaches. Translates as "The First", as this was the first barrel aged beer we ever released.
Last Branch Sour Style - Golden Ale Abv - 5.8% Ibu - 10 Srm - 6.5 Extra - Red Wine barrel aged with Blood Oranges & El Dorado hops
Schilpario Saison Style - Mix Culture Saison Abv - 6% Ibu - 10 Srm - 7 Extra - Apple Brandy barrel aged with Cherries & Raspberries. Schilpario, located in the mountains of Northern Italy, is where the Spada family is originally from. This beer is an homage to my relatives and specifically my Great Grandpa who made it possible for our brewery to exist today,
