French Creek Saison
Style - Saison Abv - 5.5% Ibu - 25 Srm - 6.5 Extra - Kohatu & Loral Hops This Saison is a combination of new and old. The modern hops blend with the classic farmhouse ale yeast strain to create a balance of citrus notes and fruity esters. The flavor profile is rounded out with a subtle maltiness from the Munich and Vienna malt.
Forte Peach Sour
Style - Golden Sour Abv - 6.4% Ibu - 1 Srm - 4.6 Extra - Oak barrel aged on peaches This golden sour is fermented in a red wine oak barrel with our house sour yeast culture. After fermentation completes, Forte is aged for several months as the sour complexity increases. The beer is aged on 48 pounds of peaches once the desired acidity and flavor is achieved.
Farmhouse Sour Blend
Style - Blended Sour Ale Abv - Varies Ibu - Under 5 Srm - Varies Extra - Oak barrel fermented and aged Occasionally we release a unique blended sour that combines our sour beer with a clean fermented beer such as our French Creek Saison or Belgian Dubbel. The sour and clean portions are selected to highlight complimenting flavors and aromas. The result is a complex and layered beer that finishes with a clean acidity.
First Light Apricot Sour
Style - Sour Ale Abv - 7% Ibu - 2 Srm - 10 Extra - Oak barrel fermented with apricots First Light is oak barrel fermented with our house blend of Brettanomyces, Pediococcus, and Saison yeast. As the beer ages acidity is produced along with a range of stone fruit and funky flavors. When the beer has properly matured apricots and a lesser amount of white peaches are added to the barrel.
Dusk Plum Sour
Style - Oud Bruin Abv - 6.5% Ibu - 6 Srm - 8 Extra - Oak barrel fermented with plums Dusk Sour Ale is oak barrel fermented with our house sour yeast blend, and then aged while the acidity matures. When the beer reaches maturity Italian Plums are added. The sweet and savory flavors of the fruit blend with the tart beer to create a delicious balance.
Style - Sour Red Abv - 6.8% Ibu - 1.5 Srm - 9 Extra - Oak barrel fermented with sweet cherries Cervoise d’Emily is oak barrel fermented with our house sour yeast blend, and then aged while the acidity matures. When the beer reaches maturity sweet cherries are added. The fruit blends with the acidic beer to create a balance of sweet cherry flavor and tart base beer. Name translates as “The ale of Emily”.
Rye Barrel Belgian
Style - Belgian Strong Dark Abv - 8.2% Ibu - 45 Srm - 30 Extra - Rye Whiskey Barrel Aged Rye Barrel Belgian begins as a Belgian Strong Dark that is fermented in stainless steel before being transferred into a Rye Whiskey Barrel from Skip Rock Distillery. Cacao Nibs, Vanilla and Coffee Beans are added to the barrel during the 6 months of aging. The results is smooth with a full chocolate & rye character.
